osmosis errors

• if the potatoes are not dried thoroughly, the mass will be too high, so make sure to dry them
• if the potatoes are squeezed too much during drying then the mass will be too low, so only dab the potatoes lightly to remove surface moisture
• potatoes may not have the same starting mass/ surface area, so ensure they have the same starting mass/ surface area
