  1. a sample to be tested is mixed with absolute ethanol (dissolves any lipids present)
  2. its shaken with an equal volume of water
  3. the dissolved lipids come out of solution (as they’re insoluble in water)
  4. they form an emulsion, making the sample cloudy white
