  • Why is it beneficial to eat some vegetables raw?
    • When cooking, nutrients can be lost in water, fats or heat
    • So by eating them raw, no nutritional value is lost
  • List 3 ways nutrients can be retained when preparing and cooking vegetables.
    • use minimal water - e.g steaming instead of boiling
    • cook at lower temperatures
    • cut veg into larger pieces
  • Vitamin C - Helps absorb iron in the body during digestion, supports immune system and helps support connective tissue in the body which bind cells in the body together. e.g citrus fruits, broccoli, cabbage
