    • Crush sample
    • Add ethanol + distilled water
    • Milky-white emulsion if positive

    • phosphate group + glycerol + 2 fatty acids
    • Hydrophillic head (attracted to water)
    • Hydrophobic fatty acid tail (repels water)

    • A fatty acid with a double bond in the carbon chain causing it to kink
    • This makes it less dense, liquid at room temp and healthier

    • Single bonds in the carbon chain making it solid at room temp, dense and unhealthy
