  • cereals are the seeds and grains of edible grasses, such as wheat, corn, and rice.
  • They are cheap, filling and easy to grow
  • Examples : wheat, corn, rice and barley
  • The Nutritive Value
    1. LBV protein in the form of Gluten for growth and repair of body cells.
    2. Small amount of unsaturated fat for heat and energy.
    3. Carbohydrate is the main nutrient in the form of starch and cellouse. ( starch for heat and cellouse for digestion )
    4. Minerals in the form of iron and calcium.
    5. Vitamin B but not when refined.
    6. Cereals are low in water.
  • Effects of cooking :
    • Starch grain swells and burst making it more digestible e.g Popcorn
    • Grains absorb liquid and thicken sauces e.g Wheat in flour
    • Cellulose is softened
