lipases are enzymes which hydrolyse the ester bonds in triglycerides to form fatty acids and monoglycerides
lipases are made in the pancreas and secreted into the small intestine

and stored in gall

which releases them into the

emulsifying
them into
smaller droplets
this
speeds up
the action of
lipases
by
increasing surface area
of
lipids
once the lipid is broken down the monoglycerides and fatty acids stay attached to the bile salts and form smaller structures called micelles
