  • There are 14 foods that contain allergens: Celery, dairy, eggs, fish, molluscs, crustaceans, lupin, mustard, peanuts, tree nuts, sesame, soy beans, sulfur dioxide and cereals containing gluten. An allergic reaction is a response by the immune system to a particular allergen, which is usually a naturally occurring protein. The immune system produces the antibody immunoglobulin which causes the production of chemicals such as histamine, which can cause symptoms such as swelling and itching. Allergic reactions can range from mild to life threatening.
  • An intolerance is a difficulty digesting certain foods, such as lactose of gluten.
