  • What are the properties of enzymes?
    The shape of the active site is complemetary to the shape of the substrate or substrates
    Bonds form between parts of the substrate and the active site, either hydrogen or ionic bonds
    Rate of chemical reactions increase as temperature increases; above the optimum temperature, enzymes will denature (the bonds that hold the tertiary structure of the active site weaken)
  • What is the role of protease?
    Convert proteins into smaller polypeptides
    Some convert polypeptides into dipeptides and/or amino acids
    Example protease: trypsin
  • What is the role of carbohydrase?
    Convert polysaccharides into disaccharides
    Others convert disaccharides into monosaccharides
    Example carbohydrase: amylase
  • What is the role of lipase?
    Convert triglycerides into glycerol and fatty acids
