Label 5 test tubes as 'lipase' and add 1cm33 of lipase to each
Take another 5 test tubes and add 5 drops of phenolphthalein
Add 5cm33of full fat milk to the indicator test tubes and label them 'milk'
Using a pipette, add 7cm33 of sodium carbonate solution to the milk (solution should turn pink)
Place a test tube of lipase and milk into the water baths until they are of the desired temperatures
Start with the lipase and milk at 20ooC
Transfer the lipase to the milk test tube. Start the stopwatch immediately and begin gently stirring
Continue stirring the contents until the pink colour disappears
Record the time taken for the pink to disappear in the results table
Repeat stages 2 - 4 for the other temperatures
Put info in a table and calculate a mean for each temperature
