  • Keep food covered to avoid contamination
  • Keep food cold by storing in a fridge which maintains a temperature range of 1-4°C
  • Ensure all food storage areas and containers are clean
  • Avoid cross-contamination by covering food to avoid contact with raw food/raw meat in the bottom of the fridge
  • Ensure leftover food is cooled quickly in a cold place for no more than 90mins
  • Do not use food which is past it's use-by date
  • Ensure food is reheated to a core temperature of 70°C for at least 2mins
  • Serve reheated food hot above 63°C
  • If using a microwave stop occasionally to shake or stir food to avoid cold spots
  • Only reheat food once
