  • the glycaemic index (GI) is a ranking of carbohydrate foods based on the overall effect on blood glucose levels
  • foods that are absorbed slowly have a low GI rating
  • foods that are absorbed quickly have a high GI rating
  • GI ratings are important for people with diabetes so they can control their blood glucose levels
  • low = <55 and is found in most fruits, non starchy veg and legumes
  • medium = 56-69 and is found in brown rice, basmati rice, oats
  • high = > 70 and is found in white bread, corn flakes, white rice and white pasta
