  • Globular proteins = compact, water soluble and usually roughly spherical.
  • Conjugated proteins= globular proteins that contain a non-protein component called a prosthetic group
  • Fibrous proteins= formed from long, insoluble molecules
  • Examples of fibrous proteins: Collagen, keratin, elastin
  • Tertiary structure:
    • hydrophobic and hydrophilic interactions
    • hydrogen bonds
    • ionic bonds
    • disulfide bonds
  • Secondary structure= hydrogen bonds
  • Primary structure= peptide bonds
  • Quaternary structure= same interactions as tertiary but they are between different protein molecules rather than within one molecule
