  • Globular proteins:
    • Highly folded, so its a compact, spherical molecule
    • Not very stable, tertiary structure is easily disrupted
    • Important when precise shapes are needed for molecular interactions e.g. enzymes
  • Fibrous proteins:
    • Polypeptide chains do not fold
    • Remain as straight chains, often with several parallel chains cross-linked
    • Sometimes form sheets
    • Insoluble
    • Very stable + 💪 
    • Important structural molecules e.g. hair
