  • Microorganisms can make proteins for human food consumption; fungal protein (mycoprotein or single-cell protein/SCP)
  • Many fungi can create proteins with similar amino acid profiles to plants and animals, it can be grown in small space like industrial fermenter and can grow on almost any organic substrate, including wastes
  • There is contamination risk, as fermenter is not sterile and there is large effort required in extracting, purifying and flavouring mycoprotein
  • Quorn is a mycoprotein, first made in 1980s, it is sold as meat substitute as it suitable for vegetarians, or as a healthy option as it contains no animal fat or cholesterol but is high in protein
