  • Gourd Family - A tendril-bearing vines, either trailing or climbing. Often large yellow or greenish flowers, and many-seeded, fleshy fruit with a hard rind, and including the cucumber, gourd, melon, pumpkin, and squash.
  • Seeds and Pods - Pod and seed vegetables include corn, legumes and okra. They are grouped together here because the parts consumed are all the seeds of their respective plants. In some cases, only the seeds are eaten; in others, the pod containing the seeds are eaten as well. Seeds are generally higher in protein and carbohydrates (starch and fiber)

  • Roots and Tubers - Vegetable roots and tubers are the underground storage systems of different plants found all over the world. A root is a compact, typically expanded storage organ that grows from root tissue and has hairy stem Ex. carrot, potato
  • Cabbage Family - Cruciferous vegetables are vegetables of the family with many genera, species, and cultivars being raised for food production such as cauliflower, cabbage, kale, garden cress, bok choy, broccoli, Brussels sprouts, mustard plant and similar green leaf vegetables. Ex. Cabbage, Brussel Sprouts
  • Leafy Greens - Leafy greens are considered to be any type of plants with leaves and/or stems that are eaten as vegetables. Ex. Spinach, Kale
  • Stalks, Stems, and Shoots - Stalk typically refers to a slender, vertical support structure that bears flowers, fruit, or leaves. Stem refers to the main structural support of a plant. It is the part of the plant that connects the roots to the leaves and
  • Mushroom Family - Mushrooms are classified as vegetables, they are not plants, and in fact, they are part of the plant kingdom known as Fungi.
