Pasteur created Germ Theory which was that microbes in the air caused decay and some germs caused disease. He published this in 1861.
Pasteur proved his theory by putting sterile water in an open and a closed flask. The water in the closed flask stayed sterile and the water in the open flask bredgerms.
Robert Koch, a German scientist, linked disease by the microbes that caused them.
