• ENZYME pH: pH affects the shape and its active site. at the optimum pH, the active site is right for the substrate, so the rate of reaction is high.
• below and above the optimum pH, the shape of the active site changes and isn't right for the substrate, so the enzyme doesn't work well.
• different enzymes have different optimum pH.
