  A broth is thin liquids with vegetables and/or meat , poultry and fish cut into tiny pieces

  They are special treated , thin clear soups garnished with tiny bits of vegetables

  The 4 types of thick soups are purèes , Bisques , creamed soup and main dish soup

  They are made from meat , pulses or vegetables that are cooked until very tender , then rubbed through a sleeve or purèed in a blender

  Bisques are thickened fish soups that are strained and then thickened with cornflour or flour at the end cooking
• What are creamed soup 


  Creamed soups , these usually have a purèe based and hot milk or cream is added just before serving
• Creamed soup - a white or brown sauce may also be added to thicken the soup
