3)Take the 20C test tube, that's been filled with milk, and add 5 drops of phenolphthalein solution and stir with a glass rod
The phenolphthalein solution will visually indicate the change in pH
4) Place the 20C test tube into a water bath, using a thermometer wait for it to heat up to 20C.
5)Using a pipette, measure 1mL of lipase solution and release it into the tube, then immediately start the stop watch
Using a glass rod, stir the contents in the tube to evenly distribute the lipase solution
6)When the solution becomes milky white, stop the stop watch and record the time.
Independent variable: Temperature of the water
Dependant variable: Time taken
Control: Amount of lipase solution, pheno indicator
Hazard: The pheno indicator is flammable and and irritant to skin
-> Wear gloves, keep away from open flames

Enzymes have active sites which are essentially key holes that fit into certain molecules they are working on. When the right molecules comes along it fits into the active site so chemical reactions are faster
