  • starch -> amylase -> maltose

  • Enzymes = large proteins made up of chains of amino acids
    1. drop iodine solution in every well of spotting tile
    2. place bunsen burner on heat proof mat - tripod and gauze over - beaker of water on top of tripod and heat 35C
    3. syringe, 1m3, amylase solution and 1cm3 of buffer solution -> pH5 to boiling tube
    4. use test tube holder, put boiling tube in beaker for 5 mins
    5. Different syringe, add 5cm3 of starch solution to boiling tube - mix contents and start stopwatch
  • continuous sampling -> record how long it takes amylase break down starch
    drop pipette, take fresh sample from boiling tube every 30 seconds and drop in well
    iodine = orange -> no starch present
