  • Reducing sugars test
    1. Add 2cm³ of food sample
    2. Add 2cm³ of Benedict's reagent
    3. Heat mixture gently in water bath for 5 mins
    4. If solution turns brick-red, reducing sugar present (positive result)
  • Non-reducing sugars test
    1. Take 2cm of food sample and add 2cm of dilute hydrochloric acid
    2. Place in water bath for 5 mins
    3. Add sodium hydrogencarbonate to neutralise
    4. Do Benedict's test again
    5. If non-reducing sugar present, colour changes from blue to brick-red
