  • Personal protective equipment (PPE) is equipment that protects the user from hazards (such as oven gloves and goggles) and prevents food from being contaminated due to poor hygiene or incorrect handling (such as hairnets and gloves). An employer will provide PPE and employees must ensure they wear the correct equipment whenever they are in the kitchen and handling food.
  • When handling food, personal hygiene is of the upmost importance, and foodhandlers have a responsibility to maintain good hygiene. They can do this by keeping nails short, not wearing false nails, regular, thorough handwashing, removing jewellery, not wearing outdoor clothing in the kitchen, wearing the correct uniform, not using perfume or aftershave, wearing waterproof, brightly coloured plasters, wiping surfaces regularly and cleaning up as you go.
