  • Cross contamination is a serious risk to keep in mind when it comes to food safety. Cross contamination involves the transfer of harmful bacteria, chemicals or allergens onto food products, and can occur through hand to hand contact, food to food contact and equipment to food contact.
  • Contamination that causes food poisoning and allergic reactions can have serious, sometimes deadly, consequences. This is why thorough cleaning (of hands, surfaces and equipment) and seperation of commodities (through the use of different workspaces, colour coding and labelling) are vital, as they prevent the transfer of any harmful substances to food products.
