    at first: increase in temperature results in more KE so the phospholipids in the membrane start to move around little bit more and becomes more fluid so more anthocyanin is able to escape and diffuse out
  • Effects of temperature (beetroot)
    Mid way: above 40° there is a rapid increase the proteins of the membrane are starting to become denatured and membrane is starting to fall apart so all the anthocyanin is leaking out
    finally: it starts to plateau the membrane has completely disintegrated and anthocyanin has leaked out till it’s reached equilibrium
