batch food processing

• 1 - a bioreactor is sterilised
• 2 - a batch of nutrients is added to a small sample of the micro-organism in the bioreactor
• 3 - The correct conditions are applied
• 4 - the micro-organisms go through the lag, log and stationary phases of the growth curve
• 5 - product is formed at log and stationary phases
• 6 - process is stopped before the decline phase to prevent micro-organisms dying or bursting
• 7 - product is removed from the bioreactor, seperated from the organisms and purified
• 8 - bioreactors is sterilised and process is repeated
• advantage of batch food processing - easier to control
• disadvantage of batch food processing - bioreacter must be sterilised often
